Fried Clams Recipes

Fried Clams (Fresh Razor Clams)
1 Cup flour
2 Tbl All purpose seasoning
1 Tsp Cajun Pepper (you can use less or more depending on how spicy you
want it)
Vegetable Oil
Prepare the Clams - Lay out the clams on paper towels for several hours.
You want all the moisture
on the clams to be gone before cooking. This will prevent oil splatter
and will
help the seasoning mix adhere to the clams.
Prepare the seasoning mix - In a bowl mix the flour and the seasonings.
Prepare the oil - Put the vegetable oil in a large sauce pan and heat up.
I usually put in about
about 1/8" of oil, but some like to fill the sauce pan till about 1/2 to
3/4 way full.
This will be up to you.
Important: make sure your oil is very hot before you begin. I always use
a test piece
of clam to make sure the oil is hot enough.
Once the oil is hot enough, take a whole fried clam and dip it into the
seasoning mix. Make sure the clam
seasoned and dip it into the oil. Repeat this process until the pan is
full or you are out of clams.
Let cook for about 30 Sec and flip. Total cook time should be about 1 minute.
You can cook longer if you
them extra crunchy, but becareful overcooking will make them like rubber.
Enjoy.... These are great as party food. I like to fry the clams immediately
after digging & cleaning them.
